Red VVelvet cake

Red Velvet Cake

Ingredients

625 ml cake flour
375 ml sugar
10 ml bicarbonate of soda
20 ml cocoa powder
5 ml salt
250 ml buttermilk
2 extra large eggs
330 ml oil
10 ml vinegar
30 ml Moir’s crimson pink food colouring
5 ml Moir’s vanilla essence

Method:
Sift the dry ingredients together. Do this TWICE.
Beat the buttermilk, eggs, oil, vinegar, colouring and essence together.
Add to the dry ingredients and pour into two greased and lined 20 cm cake tins.
Bake in a preheated oven at 180°C for 30 -35 minutes or until a skewer inserted comes out clean.
Turn out on a wire rack and leave to cool.

Icing:
100 g butter
250 ml icing sugar
230 g cream cheese
5 ml Moir’s vanilla essence
30 ml cream

Method:
Beat butter and icing sugar together until pale. Add cream cheese and vanilla and mix well.
Add the cream and beat for 1 more minute.
Sandwichcakes on top of each other with a third of the icing.
Ice the sides and top with the remaining icing. Decorate with red sugar* and raspberries.
*To make red sugar, shake together sugar and a hint of Moir’s red food colouring until the sugar turns pinky – red. Spread out on a plat to “dry”.

Thuli’s Tip:
You can also use the recipe to make cupcakes. It makes about 18 cupcakes.

Sponge Bob Square pants cake

Hello guys

I know that i have been a bit quiet but i am back now. Recently, i made a SpongeBob Square pants cake. It was my first time and i was not sure if it would turn out nicely but i am happy with the turn out as you can see. So today, i thought i could share with you how i did it, maybe a few of you out there can learn a thing or two.

RICH FRUIT CAKE

I have just been asked by my aunt to make  a rich fruit cake for her wedding. I had never done it before but a friend of mine gave me this recipe. i tried it and the cake is marvelous. I am yet to decorate it ( will take about this in a few weeks' time). But if you are interested, check out the recipe below. it is pretty simple and straight forward.



Ingredients:
500g fruits soaked overnight in 125ml of brandy or water
2 ½ cups cake flour
2 ½ teaspoons baking powder
3 eggs
2 heaped tablespoons treacle
2 heaped tablespoons cocoa powder
1 cup old fashioned brown sugar
¼ teaspoon ground ginger
½ teaspoon cinnamon
½ teaspoon mixed spice
½ teaspoon nutmeg
1 teaspoon vanilla essence or almond essence
¼ teaspoon ground cloves
125g margarine

Method:
·         Preheat oven 130 degrees Celsius, line 20cm baking tray inside and outside.
·         Soak fruits for 24 hours
·         Cream margarine, sugar and treacle
·         Add eggs one at a time, putting flour in between until finished
·         Add the fruits
·         Bake for about 2 ½ hours 

NB: The ingredients are for a small cake, medium cake is double the ingredients and large is triple the ingredients.  

Alcohol content: - Brandy has to be 40% and wine has to be 18%.

Number 4 cake


This my first attempt at making a number 4 cake. I did not have a square cake tin but had a round one and i simply followed the same basic technique of cutting the cake into 3 strips and it worked as you can see. So if  you want to make a number 4 cake and you do not  have a square tin just use your round one  and simple cut off the curved edges.

Simple purse cake

I know i have been quite for a while, i have been a bit busy but i am back now. Today, i would like to share with you how to make a simple purse cake. This is my first purse cake and i am happy it turned it turned out nicely. It is pretty easy to make.

Steps to follow 

1. Simply bake your round cake
2. After it has cooled and is ready for icing, cut it in half
3. Spread buttercream icing evenly and nicely on the two halves
4. Put the two halves together
5. Place a little buttercream icing on the cake board to be used, then place your cake on the board, cut-side down,
6. Trim the edges if there is need
7. Cover the cake, with buttercream icing, syrup or apricot jam. Roll out your fondant and cover your cake, smooth out until you have a smooth finish
8. For the handles and the base strip , i coloured my fondant pink and cut it into strip. Fot the design i pressed a star tip into the fondant.
9. lastly, i used a floral cutter for the flowers

As you can see it's pretty simple. Try it and see what happens.

How to store a Wedding cake?

My sister in-law asked me to make her wedding cake for her wedding in June. I am so excited. I have so many recipes lined up but i have only one problem. How do i store the wedding cake until June? How often do i have to sprinkle alcohol? What do i warp the cake with? please help me. I have come across so many things but i am not sure what to use.
